The blend of phospholipids that are found naturally in vegetable seeds is called lecithin. Rapeseed lecithin is a mix of phospholipids which occur in rapeseeds. If you cannot find sunflower or soya lecithin, you can always use this lecithin as an alternative. This is majorly used in bakeries, chocolate factories and as an animal feed, available in liquid form. When the oil from the liquid rapeseed lecithin is removed, it results in lecithin powder with emulsifying properties.
